Rwanda Kilimbi Honey
Despite what the name suggests there is no honey involved in the ‘honey process’, but there is a similarity! Owing to the elevation, cooler temperatures and consistent breeze Kilimbi is the ideal location for processing honeys and naturals, making this one of the best we’ve ever tasted.
This lot undergoes a fermentation period of 12 hours, during which time the parchment is agitated by way of a ceremonial foot stomping. With singing and a constant stomping movement the cherry is removed from the beans but crucially leaving mucilage attached. We were lucky enough to join in this activity on our first trip to Rwanda last year.
The pulped coffee is then transferred to the drying beds and laid out in a thin layer to begin drying, before being piled up in larger amounts to increase its thermal mass and homogenise the moisture content of the parchment. This process is conducted over 35 days until the desired moisture content is reached.

Coffees from Kilimbi are dear to our hearts, they are some of the best processed lots we receive each season and have been improving year on year. We started buying the natural lot three seasons ago, its silky orange-dominating profile blew us away and we knew then that we'd be buying it again. Fast forward three years and we are now buying the full spectrum of lots coming out of the Kilimbi washing station, all with the similar thread of orange running through them but totally unique in their own right.
We recently had the pleasure of visiting Rwanda with Raw Material and Muraho, the company who owns and operates the washing stations from which Raw Material source their Rwandan lots. We spent a week exploring Kigali (Rwanda's capital) and the coffee producing areas of Gakenke and Nyamasheke, and were quite simply blown away by the welcome we received throughout the trip. A welcome party consisting of drumming, singing and dancing was the norm, so naturally we dropped our bags and put our dancing shoes on - it would have been rude not to!
Sharing this experience with the people who produce our coffee is something very special and will not be forgotten, the country and its people are full of life and music and it permeates everything they do, especially their coffee, and we are convinced it is evident in the cup.
We have not only returned with a fresh and vigorous love for Rwanda but a whole bunch of tasty samples, some of which are new to us, which we're really excited to taste and share with you all.

Any UK purchases will be charged a flat rate of £3.50. Delivery may take up to 28 days as stated by Royal Mail, however, this usually is 1-3 working days. If your goods have not arrived after 14 days please let us know.
Local Delivery & Collection
For Collection from our Cafe in Canton and the Roastery, Gwaelod Y Garth, please choose the appropriate option in the pick-up options at the checkout. Collections will be notified by email when the order is ready to collect.
Please check opening times of your preferred location before pick up.
Next Day Service
For a fully tracked next-day delivery service please select the 24RM option at checkout. All orders received by 1 pm will be dispatched the same day between Monday and Friday.
International
For all of our International customers we are continuing to ship worldwide, this service is currently carried out through a fully tracked and signed-for service via Royal Mail. Please allow at least 14 days for this service.
